You won't need a password. The email contains all the instructions that leads you through the steps to sign the NDA after which the game will be added to your Uplay Client.

The Anno 1800 Version in the Ubisoft Store won't include a DVD. However, some german retailers are offering a DVD-Version. It's best to contact your retailer directly, as they will be able to tell you which version they have in stock. Read more
