By "old method", my assumption is that you mean copying a vanilla Note's folder (which would have a .unity3d file for the model). The basegame (and most mods) haven't included bundled their files like that for years.

Instead, everything is bundled into a single file called a master bundle.

What's relevant for you: the only difference is that the model is specified in the .dat file instead. If you copy just about any Note except the first one, you should see properties near the bottom for the model's filepath. By default, it searches the core.masterbundle but if you're creating your own mod, it won't be able to find that unless you manually specify.
