My Battlefront II copy is the Polish version which only has Polish language, but CE upgrade lists all languages (including English). Would purchasing the upgrade add support for other languages or will it be stuck with Polish only still?

Your language would remain as Polish only, it's an SKU thing, not an upgrade thing unfortunately. The upgrade adapts to the initial SKU that you purchased, which in your case is a Polish / Russian variant, I believe.
