I’m doing stealth bow at level 30 but seems like it is not needed later on when you can go heavy weapon and power armor. Is that accurate? How useful is stealth later on? What’s the viable end game builds?

Stealth is a very good end-game build, especially when you have the right weapons and armour. There's a lot of great stealth build suggestions online, so if you like this playstyle, go for it. Captainoob is a fellow Aussie YouTuber with some cool stealth builds - I suggest you check out his videos :)
